Description

Attendees will learn how to make a multi-use dough using a preferment and learn how to ball dough correctly from the pizza master himself. Tony will discuss bulk fermentation, bench resting, and the autolyze method. He’ll also demonstrate how to make tomato sauce, hand stretch, and teach several styles of pizzas using an electric oven. Tony will cover multiple styles such as Detroit, Grandma, Sicilian, Chicago Tavern/Cracker Thin, and NY in this all-in-one seminar. Full recipes will be given out.
